Ingredients:
500 g red beans
2 onions
2 carrots
4 spoons of tomato sauce
3 spoons of an oil of your choice (I use olive oil)
salt
Steps:
1. The beans are washed in a few waters and then left in the water from evening until morning to soften. In the morning they need to be boiled in 2-3 waters, to remove all of the toxins.
2. After boiling, the grains are supposed to be soft, but whole and they need to be drained into the sieve.
3. While they are draining, you need to chop the onions and the carrots. Put the olive into the pan and add the onions first, until they turn gold. Afterwards, add the carrots and stir fry for another 4 minutes. Afterwards, add the tomato sauce and leave everything while stirring for another 5 minutes. Add the salt.
4. In the end, the ingredients from the pan are going to be put into the same saucepan with the boiled beans and cook them altogether for around 20 minutes.
You can eat the beans like this, or you can add some boiled rice and tortillas and put them into your lunch box for school/work.
