Ranginak - Iranian date cake

This is a good dessert when you don't have extra time for baking. This is delicious sweet to eat with tea, coffee or just milk. Ranginak is a desert made with dates and walnuts. The dates are stuffed with walnuts and a hot batter made of butter and flour is poured over the dates. Of course, this desert is also packed with essential nutrients, vitamins and give you energy. For this desert you need a big pie dish.


Ingredients


350g fresh dates

100g walnuts

400g flour

250g butter

1 teaspoon cinnamon

1 teaspoon cardamom

2 tablespoons honey or sugar

100g ground pistachios


Instructions


1. First you need to take the seeds out of the dates. Cut a small slit vertically in each date to take the seed out.

2. Fill each date with a walnut half and place them in the dish.

3. Melt the butter over medium heat and then add the flour and stir it constantly. The batter will start to turn brownish and get thick. Stir it for about 15-20 minutes. Be careful, so the flour don't start to burning.

4. Pour the batter on the dates and sprinkle cinnamon and cardamom on it.

5. Sprinkle the ground pistachios on the batter and let it get cool for an hour or two.


You can either eat it right away or put it in the fridge and eat it later!
