Potato patties with cucumber and herb yoghurt


Iranian potato patties are easy and delicious food what you can make when you have a busy week. Potato patties are a typical everyday food in Iran and usually people eat patties with bread and yoghurt.



Ingredients for potato patties


5-6 medium potatoes

One onion

1-2 garlic cloves

5 eggs

1 teaspoon baking powder

1 teaspoon turmeric powder

Salt and pepper by own taste

Olive oil for frying


Instructions


1. Boil potatoes. When the potatoes are boiled mash them with a fork and let it get cold a little bit.



2. Add other ingredients: eggs, garlic, onion, baking powder, turmeric, salt and pepper. Mix them well with a fork.



3. Add some olive oil in a frying pan and let it get warm.


4. Make small round patties and flatten them in your hand or the other method is to put some spoonful of the potato mixture into the pan and flatten it with a scoop.





5. Fry the potato patties on one side until it is golden brown. Then flip them over and do the same thing.





Ingredients for cucumber and herb yoghurt


300g yoghurt

1-2 small cucumbers

1-2 garlic clove

1 teaspoon dried mint

Salt and pepper by own taste


Instructions


Use thick Greek or Turkish style yoghurt.


1. Peel cucumbers and slice or grate them in little pieces and place in a large bowl with yoghurt.







2. Add dried mint, shredded garlic, salt and a little bit of pepper. Stir to combine and adjust it with your own taste.





3. Put it in the fridge so flavors can combine and gets tastier.


Serve potato patties with cucumber and herb yoghurt and add some walnuts on the yoghurt!
