Oven baked chicken and vegetables for lunch

Are you feeling busy but still want to eat healthy and delicious lunch? This is super easy lunch to make. You just need chicken and vegetables that you desire.


I usually buy natural chicken fillet without bones and season it myself with spices and fresh herbs. Chicken gets ready in oven in around 20 minutes, remember to preheat the oven to 220°C.


Ingredients


Natural chicken fillet 300-400g

Parsley

Olive oil 2 tablespoons

Black pepper 1-2 teaspoons

Salt 2 teaspoons

2 cloves of garlic

Paprika 2 teaspoons

Pesto 2 tablespoons


One small broccoli

One big onion

Three carrots

One small zucchini

Two tomatoes

Balsamic vinegar 1-2 tablespoons

One cup of water



Instructions


1. Toss the chicken fillets with a little bit of olive oil and other spices in a bowl and mix them all. You can either shred the garlic or just chop it in small pieces. Remember to chop the parsley before mixing it with the chicken.


2. Put chicken fillets in a dish and add a little bit of water.

3. After putting chicken fillets in a dish, chop all the vegetables and put them around the chicken.


4. Season the vegetables with olive oil, balsamic vinegar, pepper and salt.


5. Lastly add pesto on the chicken fillets.


6. Bake chicken fillets around 20-25 minutes. Occasionally mix the vegetables and chicken so they get baked in both sides.
