Greek tomatoes Scrambled Eggs-Strapatsada

Ingredients

  • 2 tomatoes

  • 3 eggs (if you want 4 eggs you should put 3 tomatoes)

  • 3 tablespoons olive oil

  • salt

  • peper

  • feta cheese or chesse

P.S. you can put also onion. This recipe is for two portions.


Method

  • Place a pan over high heat

  • Add 3 tablespoons of olive oil and let it get very hot

  • Grade the tomatoes with large blades and discard the skin

  • Put the grated tomatoes in the pan

  • Crack the eggs into a bowl and whisk with a fork just to break up the yolks and add them to the pan

  • Add salt and the pepper and mix them for 1 minute until the eggs start to cook

  • Add the feta cheese or the cheese, mix them again, wait 1 minute and a half and remove them from the heat

Don't forget to serve it with bread!
