Dolmades are a special food, well-known in Balkans and in the Eastern World. In the greek cuisine when we talk about Dolamades we refer to vines leaves that are filled with rice or sometimes with rice and meat.
The word "Dolmas" comes from the turkish language and it is a noun that originates from the turkish verb "doldurmak" that means fill. After the destruction of Smyrna, lots of Greeks were forced to leave their houses, their belongings and move to Greece. The refugees that came to Greece, brought with them the civilization and the traditions from their places that were very similar to turkish ones, so some food and words are almost the same. However, Turkish people use the word "Dolma" for filled courgette and calamari, eggplants and peppers, while Greeks only when the vines leaves are filled with rice or meat.

In greek cuisine we have two types of Dolmades; a) dolmades with meat and rice and b) dolmades with rice. Dolmades with rice called "yalanci", turkish word, that means fake because meat is not included. According to turkish people the real dolmas is the one with the meat. However, even though it is called the same in Greece, Greek people usually eat dolmades only with rice.
